Here is a dish we really like to eat. Owensboro has the International BarBQue Festival the second week in May. Hope you like it too!

Pick out your favorite meat. Around here we like mutton, beef, pork, or chicken Rub it down with seasoning. Cook it over some red-hot coals. Baste it while it cooks. Then eat it!

The Rub

2 Tbsp Salt
2 Tbsp Brown Sugar
2 Tbsp Ground Cumin
2 Tbsp Chile Powder
2 Tbsp Freshly Cracked Black Pepper
1 Tbsp Cayenne Pepper
4 Tbsp Paprika

Simply mix together. Rub it on the meat generously and let it sit covered in the refrigerator for about 1 hour before cooking.

The Sauce

Here’s a recipe for sauce to put over your meat while it is cooking.

Ingredients

6 green onions, chopped

3 tablespoons minced shallots

2 cloves garlic, minced

1 teaspoon ground ginger

1 tablespoon ground allspice

1 teaspoon ground black pepper

2 scotch bonnet chili peppers, chopped

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon salt

1 tablespoon brown sugar

1 tablespoon of white sugar

1/2 cup fresh orange juice

3/4 cup of red wine vinegar

1/4 cup soy sauce

1/4 cup vegetable oil

1 tablespoon molasses

 Directions

In a medium, nonporous bowl, put together the green onions, shallots, garlic, ginger, allspice, ground black pepper, chili peppers, cinnamon, nutmeg, salt, brown sugar, orange juice, vinegar, wine, soy sauce, oil and molasses. Mix well, cover and allow to sit for one hour. Mix well again before adding to meat or poultry. Discard any remaining sauce.
