

These are our favorite recipes from
Grand Rapids. We read about the cherries
in Traverse City and all the apple orchards in our state. Our class ate the
cake and really liked the cherry tarts. We hope you do too! From, Sally,

APPLE CAKE
1/2 Cup oil 2 Cups sugar
2 eggs 2 teaspoons cinnamon
1 teaspoon salt 2 teaspoons soda
2 Cups flour 4 Cups diced apples
2 teaspoons vanilla
CREAM oil and sugar, ADD eggs well
beaten. SIFT dry ingredients together.
STIR in alternately with apples and vanilla...you can add some nuts. POUR
batter into greased 9X13 loaf pan. BAKE at 350 degrees for 40-50 minutes.
APPLE BAKED BEANS
1 (48 oz.) jar Randall Great Northern
Beans
4 tablespoons butter or margarine
2 large Granny Smith or any cooking apples cubed (about 3 cups)
1/2 cup brown sugar
1/4 cup white sugar
1/2 cup ketchup
1 teaspoon cinnamon
1 tablespoon molasses
1 teaspoon salt
In large skillet, melt butter, add
cubed apples and cook until tender. Add
brown and white sugar, stir and cook until sugar is melted. Stir in ketchup,
cinnamon, molasses and salt. Add beans and mix well. Pour mixture into 2
quart casserole. Bake in 400 degree oven for about 1 hour. MMMMMMMMMMMM!!!
CREAM CHEESE TARTS
12 vanilla wafer cookies
1 8oz. pkg. cream cheese - softened
2 teaspoons vanilla
2 eggs
1/2 cup sugar
1 tablespoon lemon
Cherry fruit filling for pies
12 cupcake papers (wrappers) for cupcake (muffin pan)
Put one wafer in each cupcake paper
in cupcake pan. Soften cream cheese and
add to all other ingredients. Mix until creamy. Fill each cupcake paper 2/3
full. Bake for 15-20 minutes at 375 degrees. Cool. Top with cool whip or
other whipped topping.
